Returning for its second season, the bohemian-style hotel in Cala Llonga is ready to celebrate summer in full swing. Since its inception in 2005, Hyde has stood for connection through music and art. Hyde Ibiza is the brand’s first European location, offering 401 rooms nestled in the lush green hills of Cala Llonga — a true Mediterranean oasis. SONROJO
New this year, Sonrojo is a Mediterranean beach bar that serves classic Spanish cuisine in a stunning coastal setting. Located in an idyllic spot with sea and mountain views, Sonrojo is the perfect place to unwind and embrace the Balearic lifestyle right on the beach. Open for both lunch and dinner, guests can enjoy ice-cold beers and sangria alongside a traditional menu where paella, grilled fresh fish, and crisp salads take center stage. These flavors are best savored with sandy feet, sun-kissed skin, and live music performances that complete the authentic Ibiza beach experience.
NIKO AL FRESCO
After a successful debut in 2024, Niko Al Fresco returns to Hyde Ibiza as one of the area’s top dining destinations. Located at Sun & Moon, it pairs elevated Japanese cuisine with some of the island’s most breathtaking views. Niko offers a sophisticated open-air setting where seasonal, premium ingredients and exceptional presentation define the experience.
The 2025 menu features a refined take on traditional Japanese flavors, made with local island produce. Signature dishes include the soft-shell crab bao with tempura crab, house pickles, yellow chili sauce, and shiso leaf, as well as the classic miso-glazed black cod — pure delicacy for the senses.
Complementing the culinary experience is an expertly crafted cocktail menu, with standout creations like the Hiwaki (Stoli vodka, white peach, white peony, and sparkling sake) and the Umeboshi (plum, Pocari, jasmine, Bombay Sapphire, and soda). A carefully selected sake list rounds out the irresistible dining offering at Niko Al Fresco.
